Continuing with something lusciously deep fried, GWZ introduces the popular salty egg yolk chicken wings topped with golden egg yolk sauce!
GWZ recently visited Singapore ?? and encountered salty egg yolk in a packet powder form, hence bought a pack back and got the inspiration for this dish. Enjoy your travels and look around for ingredients and newbies that can inspire your own culinary journey!!!
Method: Marinate your chicken wings with standard ingredients such as wine, soy sauce, fish sauce, pepper and other flavours you like for at least an hour or overnight. When preparing to cook the dish, pat dry the chicken wings with paper towels. In a bowl make your batter – plain flour, chilli powder/flakes, mixed grind peppers, mixed spices and most importantly salty egg yolk powder. In another bowl beat 1 to 2 eggs. Then the usual, dip the chicken wings in egg wash, then in the batter, then into the fryer. Adjust the heat accordingly to make sure it doesn’t get burnt. Once cooked take out the chicken and let it rest leaving enough room and air between one another so they do not become soggy. Now prepare the sauce, by heating some butter and margarine in a frying pan on slow to medium heat, add some golden egg yolk powder and stir. Plate your chickens and pour the sauce over the top – DONE !
•PS If you can’t get hold of salty egg yolk in powder form, you can prepare salty egg yolk the conventional way, by steaming them for 20 minutes and breaking them up for the sauce and batter.
•PPS It is recommended to separate the upper and mid joints of the chicken wings as it would be easier to batter and fry. What’s more, the mid-wing part requires a shorter cooking time.
•PPPS It is always better to buy fresh chicken wings from chicken stalls at wet markets because the meat is more succulent and juicy, however frozen ones work too.
