中秋過了,天氣開始轉涼。而轉季之初,難免會出現咳嗽起痰等等喉嚨作怪。試過各種方法都不能止咳?不如做足預防,參照中醫藥膳食譜「滋陰止咳鱷魚湯」,我用上鱷魚肉、龍脷葉、無花果等多種清潤食材煲湯,可以潤肺祛燥,打定底預防咳嗽。

增強身體免疫力
中醫常說「秋燥傷肺」,如果感到容易口乾舌燥、喉嚨疼痛,夾雜幾聲咳就要注意在入秋前後的日子,多吃清潤的食材養肺。鱷魚肉本身不是中藥,但營養價值高含「鱷魚多醣」,能在發炎的呼吸道黏膜上形成一層保護膜,因此具有抗感染、抗過敏反應、增強身體免疫力的功效!
鱷魚肉 泰國品質最好
一般買到的以鱷魚肉乾為主,產地以泰國品質最好。唔識買好易買錯了蛇肉混充的「假鱷魚肉」!有說,分辨鱷魚肉真假,真鱷魚肉紋理彎彎曲曲不規則,我的選購Tips是找間有信譽良好的店鋪購買,不少更有証書「驗明正身」呢!買好材料,跟住我的做法,好快有得飲「滋陰止咳鱷魚湯」。
Ingredients:
Lean pork, dried and frozen crocodile meat, tangerine peel, Sauropus spatulifolius Beille (dragon tongue leaf #龍脷葉 ), dried figs #無花果, ginger, salt
Preparation:
1) Blanch the pork in boiling water and rinse with tap water
2) Soak dried crocodile meat in cold water for one hour, until softened
3) Soak tangerine skin in cold water until softens
4) Defrost frozen crocodile meat
Method:
•In a pot of cold water add in ginger slices and defrosted crocodile meats, bring to boil and remove the impurities that float to the top. Now add in blanched pork and dried crocodile meats.
•Boil on high heat for 30 minutes then switch to low heat and continue to boil for another 30 minutes with the lid on or using chopsticks to support it.
•When the flavour comes out, now add in the dragon tongue leaves, tangerine peel and dried figs.
•Continue to boil for another hour and just before serving, add a pinch of salt ?
Tips:
•PS Crocodile meats are easily found at stores that sell Chinese dried seafoods and products
•PPS Do not try eating the dried crocodile meats after making soup because they are very hard, but the frozen ones are edible
