Depending on the softness of the knuckles and thickness of the sauce it is usually necessary to transfer everything back in a conventional pot to cook for a little longer. Add in the peanuts at this stage.

If the knuckles need to be softer keep the lid on and boil with low heat. Once the texture of the knuckles is to your preference, open the lid and turn to medium high heat for the sauce to thicken and condense. Ideally the sauce remaining should be similar to the texture of oyster sauce and not watery. Last minute tasting and play with flavours to your liking. If all’s good then it’s good to go!
