Steamed kuruma shrimps,one of the simplest dishes anyone can do. But here GWZ wants to teach the technique of how to keep your jumping shrimps fresh for hours after buying them prior to cooking. It can’t be more humiliating when your guests tell you the shrimps are not crunchy and fresh even though you were certain they were moving when you bought them in the morning!

Method: Once you bring your fresh jumping shrimps home the first thing that must be done is to rinse them in clean water place them in a big bowl and pour wine in the bowl. The amount of wine should just be able to cover all the shrimps. Then place the entire bowl in the fridge until it’s time to cook them.
This is the crucial step that keeps shrimps alive and fresh, because when the shrimps are drunk they fall asleep and their breathing would slow down and they also struggle less despite being out of water. They are less likely to die and hence would still be fresh when you bring them to the steamer.
This would eliminate them from losing their freshness and crunchiness when it’s cooked. Simply steam them in a steamer for 6-8 minutes, switch off the stove and keep the lid on for another minute, then serve whilst it’s steaming hot! As for the condiments the best compliment would be soy sauce with a dash of sesame oil.
Some people would like to add chilli, garlic, scallions or parsley to the soy sauce. If you do, add these ingredients, heat up some oil, when it boils, pour over the ingredients, then add sesame oil and lastly soy sauce. Enjoy seafood in its most fresh and natural flavour!!
•PS Any Chinese wine or sake is fine for soaking the shrimps, but the most price reasonable wine would be Chinese rice wines easily found at supermarkets.
•PPS If possible, use fresh live shrimps for this dish because you want to taste the natural flavour. Cooking time may vary depending on the size and shrimp specie.
