A very reasonably priced fresh water fish made with simple ingredients. So here’s the trick.
Method: Steam the fish with the dried black olives scattered on top and a few pieces of cut ginger underneath the fish (10-12 minutes depending on the size), take out, sprinkle ginger and scallions on top, pour hot cooked oil over the top and add soy sauce on fish surrounding – DONE!
*PS Dried black olives has a very distinctive aroma and can be bought in HK wet markets. They must be steamed for around 8 minutes mixed with a bit of oil before topping it on the fish *PPS Always remember to put in soy sauce last! Never ever pour hot cooked oil over it otherwise it’ll burn.
