GWZ recommends food lovers to go to the fish market to look for interesting fish species. Be brave to ask the stall what they are and how to cook them, this way you’re bound to broaden your culinary horizon!
Method: Rinse the fish, pat dry with paper towels, plate them and put aside. Soak one complete piece of dried tangerine peel ? #果皮 in water until it softens. Squeeze out the remaining water and cut into thin slices. Spread the sliced tangerine peel over the fish and also add thinly sliced ginger. Steam the fish for around 5-6 minutes. (Optionally as can be seen in this post, sprinkle some sliced spring onions on top). Heat up some oil until it’s boiling hot and pour over the fish. Pour soy bean sauce on the surrounding. Complete…an extremely simple and delicious dish.
•PS Dried tangerine peel is rather crucial in this dish because the aroma from the tangerine peel can cover up the muddy flavour of this particular type of fish – mud fish.
