Flat fish braised with bean curd puffs topped with vermicelli.
Not the easiest dish, surely worth its time. 扁魚是河鮮的一種。價錢合理和肉質嫩滑。走油後再燜依然爽滑,大家一定愛上!
Method: Marinate the flat fish with salt, cut into slices and leave aside. Prepare and chop the other ingredients, namely fermented black beans, Shanghainese ham, Chinese celery, ginger, garlic, shallots, chilli and spring onion. Rinse the vermicelli in hot water and soak with chicken stock. Quickly deep fry the fish in oil patted with a thin layer of corn flour.
Take out the fish and place fish in a sieve supported by a bowl so the remaining oil drips out or absorb with paper towels. In another pot heat it up some oil and throw in the chopped chillis, shallots, ginger, garlic and spring onion. Add the fish, give it a quick stir fry, add a dash of rice/shaoxing wine and season with sugar, soy sauce, fish sauce and other flavours you like, add the black beans then add some water or chicken stock (amount should cover 1/4 level of the fish), put in the beancurd puffs and cover allowing it to simmer with low-medium heat.
Meanwhile in another saucepan, fry the vermicelli with the soup used to soak it until it dries during the process add a small amount of sesame oil and colouring and flavour such as oyster sauce, dark sauce and sugar. Add the ham and Chinese celery and fry till the vermicelli is dry. Open the cover of fish pot, turn back to high heat, top with vermicelli add some spring onion on top for decor and serve whilst it sizzles!
•PS Remember to use vermicelli from Thailand.
•PPS Deep frying the fish is crucial because without this step the fish will shatter easily.
•PPPS If you cannot get hold of flat fish another fresh water fish alternative could be big fish.
