As people are becoming increasingly health conscious these days and because of certain allergies and being worried about the side effects of genetically modified grains, going gluten free seems inevitable. So let’s try out this gluten free penne and sirloin recipe for you healthy ones!
健康飲食成為了新時尚,不少人追求有機天然無添加;也有不少朋友因為實際需要,如食物過敏、害怕吃到基因改造的穀物,而選擇「無麩質」(gluten free)飲食。
一般人需要gluten free嗎?
無麩質飲食主要為小麥敏感、乳糜瀉患者而設,亦可參考營養師建議,一般人如果容易有皮膚炎(如濕疹)、過敏性腸胃、類風濕、糖尿病都可以減少進食麩質,舒緩相關徵狀。
隱形小麥製品 醬汁最難防避
我們的米飯飲食文化 本身已是gluten free了,小心這些隱形的小麥製品,便輕鬆戒除小麥了,最易誤食的小麥製品有:麵包、蛋糕、餅乾、穀物早餐、穀物能量棒、啤酒、豉油或汁料等等。
而歐美的主食意粉、麵包多為小麥製造,今日我特別揀選列明gluten free的長通粉,配搭香蒜青醬西冷牛扒,絕對是個要bookmark 跟著做的gluten free簡易食譜。
Ingredients:
Sirloin steak, gluten free pasta, pesto sauce, butter, olive oil, rosemary, oregano, mustard, salt and pepper
Method:
- Boil a pan of water adding a generous amount of salt and some olive oil for cooking the pasta.
- Season the sirloin steaks with salt and pepper and fry in a separate frying pan using olive oil and butter.
- With high heat sear both sides of the steak. Turn to medium heat, add some rosemary and oregano and using a spoon pour the oil and herbs on the surface of the steak whilst the other side is frying. Repeat the same process after flipping the steak.
- Fry until your preference (be it medium rare, medium or well done), and take out to rest on a plate for 5-7 minutes.
- Meanwhile, cook the pasta, drain it then mix with pesto sauce and season with some black pepper.
- You may choose to add some oil remains from frying the steak to the pasta and then stir together.
- Plate the pasta and steak together, add a dash of mustard on the side and serve!
Tips:
- PS gluten free pasta does not have the elasticity of normal pasta so do not cook it as long and do not leave it in the colander either because it will become soggy
- PPS Steaks must be rested before serving, because the juices have to be absorbed back into the meat
