GWZ Spaghetti Aglio e olio accompanied with a leg of duck.Posting something western for a change.

Method: Cook the spaghetti in boiling water. Meanwhile, fry the duck leg on both sides until the skin is slightly golden, season with salt and pepper, top with mixed herbs then put it in the oven for around 15-20 minutes. Keep the oil from frying the duck leg, heat it up in a pan using medium heat, fry the chopped garlic and shallots add paprika, chilli powder and black pepper - keep stirring. Drain the spaghetti using a sieve but save some of the pasta water 💦. Immediately pour the spaghetti in the frying pan and mix with the garlic etc, a bit of olive oil can be added if necessary. Stir, then add some pasta water, turn to high heat, season with some good salt, give it a try and if it suits your palette switch off the fire and plate the spaghetti aglio e olio. Take the duck leg out from the oven and place it on top of the spaghetti. Just before serving, add a dash of truffle oil - “Service please!!!!”

*PS Use Japanese spaghetti if you can get hold of it because the texture is more bouncy and chewy

*PPS The yellowish colour on the spaghetti is from the duck oil, all natural

*PPPS Remember to add some olive oil and salt whilst cooking pasta
