Using leftovers to make wonders! For this recipe, a simple bowl of fried mixed mushrooms with pork was used to transform into a delicious plate of fusion styled spaghetti! 昨晚個隔夜雜菌炒瘦肉可以點處理?就不如將佢變成美味嘅中西合璧fusion炒意粉!
Method: Start off by cooking the spaghetti in boiled water with added salt. Whilst that is being done prepare some chopped garlics, shallots and chilli flakes mixed with cracked peppercorns. Heat up a frying pan, add olive oil then add shallots and garlic. When the aroma comes out add in the chilli flakes mixture and the leftover mushroom dish. Give it a quick toss, drain the spaghetti and pour it in the frying pan, give it a few more tosses and season with salt. Plate it in Chinese style and eat it with chopsticks!
•PS Truffle oil is completely optional but do not add it in during the cooking process, only add in a few drops after the dish is complete.
•PPS it is advisable to save up some pasta water when draining the spaghetti. It could be used and added to the dish during cooking in case it gets too dry or if the pasta is undercooked.
