無論聖誕派對或平日午餐,總會留下一些餸菜,例如是午餐剩餘的香茅雞翼,棄置不理又很浪費。鍾情雞翼的王子秉承惜食精神,將剩菜大翻身,由泰式香茅雞翼,變身成為五香南薑雞翼,為菜式添上新口味。
Ingredients:
- Leftover chicken wings
- mixed peppercorns, salt, five spice powder, galangal powder (南薑粉)
- minced shallots, minced garlic, spring onions, chilli
Preparation:
- Grind peppercorns and mix with quarter spoon of five spice powder and galangal powder, and a bit of salt
- Cut up garlic, shallots, spring onions and chilli
Method:
- Preheat oven to 180 degrees Celsius and place chicken wings in wrapped with baking paper for 10 minutes
- In a cast iron pan, heat some oil and fry the garlic, shallots and chilli
- Add chicken wings and fry together for 1 minute, then pour in the grind pepper and powders and fry together for 10 seconds
- Switch off fire and sprinkle some spring onions in and give it a few more stirs
- Serve on plate and sprinkle remaining spring onions on top

- PS Adjust the flavour accordingly. If chicken wings are not very savoury to begin with you may consider adding more salt or some soy sauce in the frying process
